Preheat your grill or stovetop grill pan to medium-high heat.
Roast the poblano peppers directly over a gas flame or on the grill until the skin is blackened and blistered on all sides. Place the roasted peppers in a bowl and cover with plastic wrap to steam for about 10 minutes.
Once cooled, peel off the skin, remove the seeds and stems, and slice into strips. Set aside.
In a mixing bowl, combine the ground beef, salt, black pepper, garlic powder, and cumin. Mix well but do not overwork the meat.
