Ingredients

  • 1 pound Raw large shrimp, peeled and deveined (tails on or off as per preference)
  • 0.75 cup All-purpose flour
  • 0.25 cup Cornstarch
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper (adjust to taste)
  • 1 large Egg
  • 0.75 cup Cold sparkling water
  • 4 cups Oil for frying (vegetable, canola, or peanut oil)
  • 1 Fresh red chili, thinly sliced (for garnish, optional)
  • 2 tablespoons Fresh cilantro (for garnish, optional)
  • 2 Lime wedges (for serving, optional)

Directions

Step 1

Rinse the shrimp under cold water and pat dry with a paper towel. Set aside.

Step 2

In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, garlic powder, paprika, and cayenne pepper.

Step 3

In a small bowl, beat the egg and gradually whisk in the cold sparkling water. Pour this wet mixture into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are fine.

Step 4

Heat the oil in a large, deep skillet or pot over medium-high heat to 350°F (175°C). Use a thermometer to check the temperature if possible.

Step 5

Once the oil is ready, dip each shrimp into the batter, ensuring it's fully coated, and gently lower it into the hot oil.

Step 6

Fry the shrimp in small batches to avoid overcrowding the pan. Cook for 2-3 minutes or until golden brown and crispy, turning halfway through if necessary.

Step 7

Remove the shrimp with a slotted spoon and transfer to a plate lined with paper towels to drain excess oil.

Step 8

Repeat the frying process until all the shrimp are cooked.

Step 9

Optional: Garnish with thinly sliced red chili and fresh cilantro, and serve with lime wedges on the side.

Step 10

Serve immediately while hot and crispy. Enjoy your Chile Fried Shrimp!
