Ingredients

  • 20 pieces Dried chile de arbol peppers
  • 4 pieces Garlic cloves
  • 1 cup White vinegar
  • 1 cup Water
  • 1 teaspoon Salt
  • 1 tablespoon Olive oil

Directions

Step 1

Remove the stems from the chile de arbol peppers. You can also remove some seeds if you want to slightly reduce the heat.

Step 2

Heat a skillet over medium heat and toast the chile de arbol peppers for about 1-2 minutes, stirring constantly, until they become fragrant. Be careful not to burn them.

Step 3

In the same skillet, add the garlic cloves and lightly toast them for 1-2 minutes until the skins begin to brown. Remove the skins after toasting.

Step 4

In a small pot, combine the toasted chile de arbol peppers, toasted garlic, white vinegar, and water. Bring to a boil, then reduce heat to low and simmer for 5 minutes to soften the peppers.

Step 5

Remove the pot from heat and let the mixture cool for about 5 minutes.

Step 6

Transfer the mixture to a blender or food processor. Add the salt and olive oil, then blend until the mixture is smooth. (Use caution when blending hot liquids to avoid splattering.)

Step 7

Taste the sauce and adjust seasoning if needed. If the sauce is too thick, you can add an extra tablespoon of water at a time until your desired consistency is reached.

Step 8

Pour the sauce into a clean glass jar or bottle and let it cool completely before storing. Refrigerate the sauce—it will keep for about 2 weeks.
