  • 2 whole Dried ancho chilies
  • 2 cups Chicken broth
  • 2 tablespoons Tomato paste
  • 3 whole Garlic cloves
  • 1 teaspoon Ground oregano
  • 2 tablespoons Vegetable oil
  • 0.5 cup White onion
  • 2 tablespoons Cilantro

Directions

Step 1

Soak the guajillo and ancho chilies in hot water for 15 minutes until softened. Remove their stems and seeds, then set them aside.

In a blender, combine the soaked chilies, chicken broth, tomato paste, garlic cloves, oregano, and a pinch of salt. Blend until smooth to create the Chile Colorado sauce. Set aside.
