  • 3 cups chicken broth
  • 1 cup milk or half-and-half
  • 4 oz cream cheese, softened
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh cilantro, chopped (optional, for garnish)
  • 1 cup shredded Monterey Jack cheese (optional, for serving)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add the olive oil.

Step 2

Season the chicken breasts with a pinch of salt and pepper, then add them to the pot. Sear on each side for 3-4 minutes, until lightly browned. Remove from the pot and set aside.

In the same pot, add the diced onion and sauté for 3-4 minutes, until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
