Ingredients

  • 4 cups Water
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Molasses
  • 0.5 cup Brown sugar
  • 2 tablespoons Honey
  • 0.25 teaspoon Wintergreen extract
  • 1 piece Star anise (optional, for garnish or extra flavor)
  • 4 cups Carbonated water (sparkling water or club soda)
  • 8 pieces Ice cubes

Directions

Step 1

In a medium saucepan, combine 4 cups of water, 1 teaspoon of vanilla extract, 1 tablespoon of molasses, 1/2 cup of brown sugar, and 2 tablespoons of honey.

Step 2

Place the saucepan over medium heat and stir continuously until the sugar completely dissolves, approximately 3-5 minutes. Do not let the mixture boil.

Step 3

Remove the saucepan from the heat and stir in 1/4 teaspoon of wintergreen extract. Taste and adjust with more brown sugar or wintergreen extract if desired.

Step 4

Allow the mixture to cool completely to room temperature. You can speed up the cooling process by transferring it to a bowl and placing it over a bowl of ice water.

Step 5

Once cooled, pour the syrup into a pitcher. Add 4 cups of carbonated water (sparkling water or club soda) to the syrup and gently stir to combine.

Step 6

Fill 4 glasses with 2 ice cubes each and pour the root beer evenly into the glasses.

Step 7

For an optional garnish or added flavor, place a star anise piece in each glass.

Step 8

Serve immediately for a fizzy and flavorful homemade children's root beer!
