Ingredients

  • 8 pieces Corn tortillas
  • 2 tablespoons Olive oil
  • 2 cups Canned chickpeas (drained and rinsed)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 pieces Roma tomatoes (diced)
  • 0.5 cup Red onion (diced)
  • 0.25 cup Fresh cilantro (chopped)
  • 1 piece Avocado (sliced)
  • 1 tablespoon Lime juice
  • 0.5 cup Sour cream
  • 1 teaspoon Lime zest
  • 1 teaspoon Hot sauce (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Lightly brush each tortilla with olive oil on both sides and place them on a baking sheet in a single layer. Bake for 8-10 minutes, flipping halfway, until crispy and golden. Set aside.

Step 3

In a medium bowl, mix the chickpeas with cumin, smoked paprika, garlic powder, salt, and black pepper. Toss until the chickpeas are evenly coated with the spices.
