  • 30 ounces Cooked or canned chickpeas (rinsed and drained)
  • 3 cups Vegetable stock or water
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Lemon zest
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro or parsley (chopped, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.
