Ingredients

  • 1 cup couscous
  • 1 cup vegetable broth
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 1.5 cups cherry tomatoes, halved
  • 1 cup canned chickpeas, drained and rinsed
  • 3 cups fresh spinach, chopped
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 lemon, juiced
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a medium saucepan, bring the vegetable broth to a boil. Once boiling, remove from heat and stir in the couscous. Cover and let it sit for 5 minutes to absorb the liquid. Fluff with a fork and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally, until they soften slightly.
