Ingredients

  • 15 oz Canned chickpeas, drained and rinsed
  • 1 cup Breadcrumbs
  • 0.5 cup Red onion, finely chopped
  • 2 Garlic cloves, minced
  • 0.25 cup Fresh parsley, chopped
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 1 Egg
  • 2 tbsp Olive oil

Directions

Step 1

1. In a large mixing bowl, add the canned chickpeas and mash them using a fork or potato masher until mostly smooth with a few chunks.

2. Add the breadcrumbs, finely chopped red onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, and black pepper. Mix well to combine all the ingredients.

3. Beat the egg in a small bowl and add it to the chickpea mixture. Mix until the ingredients are fully incorporated.

4. Divide the mixture into 8 equal parts and shape each part into a patty, pressing them firmly together.
