  • 1 tsp ground coriander
  • 0.5 tsp paprika
  • 3 tbsp all-purpose flour (or chickpea flour for gluten-free)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp lemon juice
  • 3 tbsp olive oil (for frying)

Directions

Step 1

In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, paprika, flour, salt, black pepper, and lemon juice.

Pulse the mixture until a coarse, sticky dough forms. Be careful not to over-process; you want the patties to have some texture.

Step 3

Using your hands, divide the mixture into 8 equal portions and shape each into a patty, about 2.5 inches in diameter. If the mixture is too sticky, lightly coat your hands with flour while shaping.
