Ingredients

  • 400 grams (cooked, or 1 canned, drained) Chickpeas
  • 60 grams (1/2 cup) All-purpose flour
  • 1 teaspoon Baking powder
  • 2 cloves (minced) Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons (chopped) Fresh parsley
  • 60 milliliters (1/4 cup) Water
  • 120 milliliters (for frying) Vegetable oil
  • 120 grams (1/2 cup) Mayonnaise
  • 2 teaspoons Hot sauce
  • 1 teaspoon Lemon juice

Directions

Step 1

In a large mixing bowl, mash the cooked or canned chickpeas with a fork or potato masher until mostly smooth but still slightly chunky.

Step 2

Add the flour, baking powder, minced garlic, cumin, smoked paprika, salt, black pepper, and chopped parsley to the bowl. Stir until well combined.

Gradually add the water, a little at a time, until the mixture comes together into a thick batter that holds its shape. You may not need all the water.

Heat the vegetable oil in a large skillet over medium heat until it shimmers.
