Ingredients

  • 1 can (15 oz) canned chickpeas, drained and rinsed
  • 0.5 cup all-purpose flour
  • 1 large egg
  • 1 tablespoon lemon juice
  • 0.25 cup fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 cloves garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup olive oil

Directions

Step 1

In a large bowl, mash the chickpeas using a fork or potato masher until mostly smooth with some chunks remaining for texture.

Step 2

Add the flour, egg, lemon juice, parsley, cumin, coriander, minced garlic, salt, and black pepper to the mashed chickpeas. Mix well until a thick batter forms.

Step 3

Heat olive oil in a large skillet over medium heat.

Step 4

Scoop approximately 2 tablespoons of the chickpea mixture per fritter and carefully drop it into the hot oil. Flatten slightly with the back of a spoon.

Step 5

Cook the fritters for about 3-4 minutes on each side, or until golden brown and crisp.

Step 6

Remove the cooked fritters from the skillet and drain on a plate lined with paper towels.

Step 7

Repeat the process with the remaining chickpea mixture, adding more oil to the skillet if necessary.

Step 8

Serve the chickpea fritters warm, with lemon wedges or your favorite dip on the side.
