Ingredients

  • 1 large eggplant
  • 1 cup canned chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 large garlic cloves
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 1 tablespoon fresh parsley (for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pierce the eggplant several times with a fork and place it on a baking sheet. Roast for 25-30 minutes or until the skin is wrinkled and the interior is soft.

Step 3

During the last 5 minutes of roasting, wrap the garlic cloves (with their skins on) in a piece of aluminum foil and place them in the oven to roast alongside the eggplant.

Step 4

Once the eggplant has cooled enough to handle, scoop out the flesh into a food processor, discarding the skin.

Step 5

Peel the roasted garlic cloves and add them to the food processor along with the chickpeas, tahini, lemon juice, olive oil, cumin, smoked paprika, and salt.

Blend the mixture until smooth and creamy, scraping down the sides as needed. Adjust seasoning to taste.

Transfer the dip to a serving bowl and drizzle with a little olive oil. Garnish with fresh parsley and a pinch of smoked paprika for presentation.
