Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 2 tablespoons olive oil
  • 1 15-ounce can canned chickpeas
  • 1 cup dried cranberries

  • 0.5 cup parsley
  • 2 tablespoons lemon juice

  • 0.25 teaspoon black pepper

Directions

Step 1

In a medium saucepan, bring the water to a boil. Add a pinch of the salt and 1 tablespoon of olive oil into the water.

Stir in the couscous, cover the pot, and remove it from heat. Let it sit for 5 minutes to absorb the liquid.
