Ingredients

  • 15 oz canned chickpeas
  • 1 cup breadcrumb
  • 0.5 cup red onion
  • 0.25 cup fresh parsley
  • 2 garlic cloves
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 large egg
  • 4 hamburger buns
  • 4 lettuce leaves
  • 0.5 cup sliced tomatoes
  • 0.5 cup sliced cucumber

Directions

Step 1

Drain and rinse the canned chickpeas well. Pat them dry with a paper towel to remove excess moisture.

Step 2

In a food processor, combine the chickpeas, breadcrumbs, finely chopped red onion, parsley, minced garlic, cumin, coriander, smoked paprika, salt, and pepper. Pulse until the mixture is well combined but not completely pureed.

Step 3

Add the lemon juice, olive oil, and egg to the chickpea mixture in the food processor. Pulse again until everything is just incorporated. The mixture should hold together when pressed but still have some chunks.

Step 4

Transfer the mixture to a bowl and divide it into four equal portions. Shape each portion into a patty approximately 1 inch thick.

Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for 3-4 minutes on each side or until they are golden brown and heated through.

While the patties are cooking, toast the hamburger buns until golden brown.

Assemble the burgers: Place a lettuce leaf on the bottom half of each bun. Add the chickpea patty, then top with sliced tomatoes and cucumbers. Cover with the top half of the bun.
