  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 4 tablespoons All-purpose flour (plus extra for coating)
  • 3 tablespoons Breadcrumbs
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Lemon zest
  • 0 as needed Olive oil (for frying)

Directions

Step 1

In a large mixing bowl, combine the chickpeas, chopped onion, minced garlic, fresh parsley, fresh mint, cumin, coriander, paprika, salt, black pepper, and lemon zest.

Using a potato masher or food processor, mash the chickpeas until the mixture is mostly smooth but still has some texture.
