Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 15 ounces canned chickpeas, drained and rinsed
  • 0.75 cup orzo pasta
  • 6 cups vegetable broth
  • 14 ounces diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups baby spinach
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped parsley (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, garlic, carrots, and celery to the pot. Sauté for 5-7 minutes, or until the vegetables begin to soften.

Step 3

Stir in the chickpeas, oregano, thyme, and the bay leaf, cooking for 1 minute to bloom the spices.

Step 4

Add the vegetable broth and diced tomatoes to the pot, stirring to combine. Bring the mixture to a boil.

Step 5

Once boiling, reduce the heat to a simmer and add the orzo pasta. Let it cook for 8-10 minutes, stirring occasionally to prevent sticking.

Step 6

When the orzo is tender, stir in the baby spinach and cook for an additional 2 minutes, until wilted.

Step 7

Remove the bay leaf and stir in the lemon juice, salt, and black pepper. Adjust seasoning to taste.

Step 8

Ladle the soup into bowls and garnish with chopped parsley, if desired. Serve hot and enjoy!
