Ingredients

  • 1 cup Chickpea flour
  • 1 cup Cooked chickpeas
  • 0.5 cup Fresh coriander (cilantro), chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 1 unit Green chili, finely chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.25 cup Water
  • 3 tablespoons Neutral oil (for frying)
  • 4 cups Vegetable stock
  • 0.5 teaspoon Turmeric powder
  • 1 tablespoon Fresh lemon juice
  • 2 tablespoons Chopped spring onions or scallions (optional, for garnish)

Directions

Step 1

In a large bowl, combine chickpea flour, salt, ground cumin, ground coriander, and turmeric powder. Mix well.

Step 2

Add chopped coriander (cilantro), minced garlic, ginger, green chili, and cooked chickpeas to the bowl.

Step 3

Gradually add water to the mixture, stirring continuously until a sticky dough forms. If the consistency is too dry, add more water in small increments.

Step 4

Using slightly wet hands, shape the dough into small, round dumplings (about the size of a walnut). Set aside on a tray.

Step 5

Heat the neutral oil in a large pan over medium heat. Once hot, fry the dumplings in batches until golden brown on all sides, about 2-3 minutes per batch. Transfer to a plate lined with paper towels to drain excess oil.

Step 6

In a separate pot, bring the vegetable stock to a gentle simmer. Add lemon juice and adjust seasoning with salt to taste.

Step 7

Carefully add the fried dumplings to the simmering stock and cook for an additional 5-7 minutes to allow them to absorb the flavors.

Step 8

Remove the pot from heat and let it rest for 2-3 minutes before serving.

Step 9

Serve hot, garnished with additional chopped coriander and spring onions if desired.
