Ingredients

  • 3 pieces celery stalks, thinly sliced
  • 0.5 piece red onion, finely diced
  • 2 tablespoons parsley, chopped
  • 2 tablespoons lemon juice (freshly squeezed)
  • 3 tablespoons olive oil
  • 1 teaspoon honey or maple syrup
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse and drain the chickpeas if using canned. Place them in a large mixing bowl.

Step 2

Thinly slice the celery stalks, ensuring even slices for texture. Add them to the bowl with the chickpeas.

Step 3

Finely dice half of a red onion and add it to the bowl.
