  • 4 cups beef broth
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 0.5 tsp ground coriander
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the beef stew meat with salt and pepper.

Step 2

Heat a large, heavy-bottomed pot over medium-high heat and add 1 tablespoon of olive oil. Working in batches to avoid overcrowding, sear the beef until browned on all sides. Remove and set aside.

Add the remaining tablespoon of olive oil to the pot. Sauté the diced onion until it becomes soft and translucent, about 5 minutes.
