Ingredients

  • 2 pieces Chicken breast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 cup Plain Greek yogurt
  • 1 tablespoon Lemon juice
  • 1 teaspoon Honey
  • 1 clove Garlic, minced
  • 0.5 cup Cucumber, diced
  • 0.5 cup Cherry tomatoes, halved
  • 0.25 cup Red onion, thinly sliced
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh dill, chopped
  • 4 cups Mixed greens or lettuce

Directions

Step 1

Season chicken breasts with salt and black pepper on both sides.

Step 2

Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let the chicken rest for 5 minutes. Slice into bite-sized pieces.
