Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 4 cups Yellow squash
  • 1 medium Onion
  • 2 tablespoons Butter
  • 1 can (10.5 oz) Cream of chicken soup
  • 1 cup Sour cream
  • 2 cups Cheddar cheese
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Garlic powder
  • 1 sleeve (about 30 crackers) Ritz crackers
  • 3 tablespoons Butter (melted)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Bring a large pot of water to a boil. Add the chicken breasts, and cook for 15-20 minutes until fully cooked. Remove the chicken from the pot, let it cool slightly, and shred it using two forks.

Step 3

While the chicken cooks, wash and slice the yellow squash into thin rounds. Dice the onion into small pieces.

Step 4

In a large skillet, melt 2 tablespoons of butter over medium heat. Sauté the yellow squash and onion for 5-7 minutes until softened. Remove from heat and set aside.

Step 5

In a large mixing bowl, combine the cream of chicken soup, sour cream, salt, black pepper, garlic powder, and 1 cup of the cheddar cheese. Stir well until smooth.

Step 6

Add the shredded chicken and sautéed squash and onion to the bowl. Mix until everything is evenly coated.

Grease a 9x13-inch baking dish and pour the chicken and squash mixture into the dish. Smooth out the top with a spatula.

Sprinkle the remaining 1 cup of cheddar cheese evenly over the casserole.

Crush the Ritz crackers into fine crumbs and place them in a small bowl. Mix in the melted butter until the crumbs are evenly coated.

Place the casserole in the preheated oven and bake for 30-35 minutes, or until hot and bubbly and the topping is golden brown.
