Ingredients

  • 1 kg Chicken (bone-in or boneless, cut into pieces)
  • 2 medium Onions (finely chopped)
  • 2 medium Tomatoes (finely chopped)
  • 1 cup Coconut (grated)
  • 6 pieces Dried red chilies
  • 2 tablespoons Coriander seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Fennel seeds
  • 4 pieces Cloves
  • 1 inch Cinnamon stick
  • 6 pieces Peppercorns
  • 1 teaspoon Turmeric powder
  • 1 tablespoon Ginger (grated)
  • 1 tablespoon Garlic (minced)
  • 1 tablespoon Tamarind pulp
  • 3 tablespoons Vegetable oil
  • 1.5 teaspoons Salt
  • 2 cups Water
  • 2 tablespoons Fresh coriander leaves (for garnish)

Directions

Step 1

Heat 1 tablespoon of oil in a pan over medium heat. Add coconut and roast until golden brown. Remove and set aside.

Step 2

To the same pan, add dried red chilies, coriander seeds, cumin seeds, fennel seeds, cloves, cinnamon stick, and peppercorns. Roast until fragrant. Let cool and grind the roasted spices and coconut into a fine paste using a little water.

Step 3

In a large pot, heat the remaining oil over medium heat. Add chopped onions and sauté until golden brown.

Step 4

Add ginger and garlic, and cook for 1-2 minutes until fragrant.

Step 5

Add the chopped tomatoes and cook until soft and oil begins to separate.

Step 6

Add turmeric powder and the prepared coconut and spice paste. Stir well and cook for 3-4 minutes.

Step 7

Add the chicken pieces and sauté for 5 minutes to coat them in the spice mixture.

Step 8

Add tamarind pulp, salt, and water. Mix well, cover, and simmer over low heat for 25-30 minutes, or until the chicken is tender and the curry thickens.

Step 9

Taste and adjust seasoning as needed.

Step 10

Garnish with fresh coriander leaves and serve hot with steamed rice or bread.
