Bring a large pot of salted water to a boil. Cook the cheese tortellini according to package instructions. Reserve 1/2 cup of the pasta water and drain the rest. Set the tortellini aside.
While the tortellini cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and black pepper on both sides, then add them to the skillet.
Cook the chicken for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest on a cutting board. Slice into thin strips once slightly cooled.
