  • 2 tablespoons olive oil

  • 14 ounces canned crushed tomatoes
  • 0.5 cup chicken broth
  • 0.5 cup green olives, pitted and halved
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Pat the chicken thighs dry with a paper towel and season them on both sides with salt and black pepper.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken thighs, skin-side down, and sear for about 5-6 minutes until the skin is golden brown. Flip and sear the other side for 3-4 minutes. Remove the chicken from the skillet and set aside.
