Ingredients

  • 4 pieces Chicken thighs (bone-in, skin-on)
  • 2 links Sweet fennel sausage

  • 28 ounces Crushed tomatoes (canned)
  • 1 cup Chicken broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Polenta (coarse-ground cornmeal)
  • 4 cups Water
  • 2 tablespoons Butter
  • 0.5 cup Parmesan cheese (grated)
  • 2 tablespoons Fresh parsley (chopped, optional for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt and black pepper, then sear them skin-side down until golden brown, about 4-5 minutes. Flip and sear the other side for 2-3 minutes. Remove the chicken and set it aside on a plate.

Step 2

Add the sweet fennel sausage to the same skillet and cook until browned on all sides, about 4-5 minutes. Remove the sausage and slice it into 1-inch pieces.
