Ingredients

  • 4 pieces Chicken breasts
  • 1 cup Walnuts
  • 1 cup Fresh coriander leaves (cilantro)
  • 3 pieces Garlic cloves
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Chicken stock
  • 0.5 cup Heavy cream

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Toast the walnuts in a dry skillet over medium heat for about 3-4 minutes, stirring frequently, until they are golden and aromatic. Set aside to cool slightly.

Step 3

In a food processor, combine the toasted walnuts, fresh coriander leaves, garlic cloves, 2 tablespoons of olive oil, lemon juice, ground cumin, paprika, salt, and black pepper. Blend until smooth, scraping the sides as needed. Add a few tablespoons of chicken stock to reach a sauce-like consistency if necessary.

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breasts with a pinch of salt and pepper on both sides.

Remove the dish from the oven and stir in the heavy cream into the sauce around the chicken for added richness.
