  • 1 cup blue cheese crumbles
  • 1 cup chicken broth
  • 4 cups baby spinach
  • 2 cloves fresh garlic
  • 1 tablespoon lemon juice

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, and paprika.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add chicken breasts to the pan and sear for 4-5 minutes on each side, or until golden brown and cooked through. Remove chicken from the skillet and set aside.

Step 3

Reduce heat to medium and add 1 tablespoon of butter to the skillet. Mince the garlic and sauté it until fragrant, about 1 minute.
