Ingredients

  • 4 pieces Boneless, skinless chicken thighs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 3 cloves Garlic cloves
  • 1.5 cups Cherry tomatoes
  • 1 teaspoon Dried oregano
  • 0.5 cup Chicken broth
  • 2 tablespoons Fresh basil leaves

Directions

Step 1

Season the chicken thighs on both sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken thighs and sear them for 2-3 minutes on each side until they are golden brown. Remove the chicken from the skillet and set aside.

Step 3

Thinly slice the red and yellow bell peppers and mince the garlic cloves. Add the remaining 1 tablespoon of olive oil to the same skillet and reduce the heat to medium.

Step 4

Sauté the bell peppers for 5-6 minutes until they begin to soften. Add the minced garlic and cook for 1 minute, stirring frequently to prevent burning.

Halve the cherry tomatoes and add them to the skillet along with the dried oregano. Stir everything together and let it cook for 5 minutes until the tomatoes begin to release their juices.
