Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 pieces garlic cloves, minced
  • 0.5 teaspoons crushed red pepper flakes
  • 6 cups fresh spinach
  • 15 ounces diced tomatoes (canned or fresh)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 cups chicken broth
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season both sides of the chicken breasts with 0.5 teaspoon of salt and 0.5 teaspoon of black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.

Step 3
