Preheat the oven to 375°F (190°C).
Slice off the top of the garlic bulb to expose the cloves. Drizzle the garlic with a teaspoon of olive oil, wrap it in foil, and roast in the oven for 25-30 minutes until the cloves are soft and lightly caramelized.
Season the chicken breasts on both sides with salt and pepper.
Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Sear the chicken breasts for 4-5 minutes per side until golden brown. Transfer to a plate and set aside (they do not need to be fully cooked at this stage).
In the same skillet, lower the heat to medium and add the remaining 1 tablespoon of butter. Squeeze the roasted garlic cloves out of their skins and mash them into a paste. Add the garlic paste to the skillet.
Pour in the chicken broth and scrape the bottom of the skillet to deglaze the pan, releasing any browned bits.
Stir in the heavy cream and Parmesan cheese, whisking until smooth. Add the Italian seasoning and let the sauce simmer for 5 minutes until slightly thickened.
Return the chicken breasts to the skillet, along with any juices that have collected on the plate. Simmer for another 7-10 minutes, spooning the sauce over the chicken, until the chicken is fully cooked and the sauce is thick and creamy.
Garnish with fresh parsley if desired, and serve hot. This dish pairs wonderfully with mashed potatoes, pasta, or roasted vegetables.
