Pat chicken thighs dry with paper towels and season both sides with the salt and freshly ground black pepper.
In a large, heavy-bottomed skillet or sauté pan, heat olive oil over medium-high heat. Place the chicken thighs skin-side down and sear until the skin is crispy and golden brown, about 5-6 minutes.
