  • 4 pieces bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil

  • 2 pieces medium shallots, finely chopped
  • 3 pieces garlic cloves, minced
  • 1 cup dry Riesling wine
  • 1 cup chicken stock
  • 0.5 cup heavy cream
  • 1 cup seedless green grapes, halved
  • 3 sprigs fresh thyme sprigs
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Pat chicken thighs dry with paper towels and season both sides with the salt and freshly ground black pepper.

Step 2

In a large, heavy-bottomed skillet or sauté pan, heat olive oil over medium-high heat. Place the chicken thighs skin-side down and sear until the skin is crispy and golden brown, about 5-6 minutes. Flip the chicken and cook the other side for another 4-5 minutes. Remove the chicken from the skillet and set aside on a plate.

Reduce the heat to medium and add the butter to the skillet. Once melted, stir in the chopped shallots and cook until softened, about 2-3 minutes. Add the minced garlic and cook for 30 seconds, until fragrant.

Remove the lid and stir in the heavy cream and halved grapes. Simmer uncovered for another 5 minutes, allowing the sauce to thicken slightly and the grapes to soften.

Discard the thyme sprigs and adjust seasoning with additional salt and pepper if needed.
