  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 medium tomatoes
  • 0.5 medium red onion
  • 1 small jalapeño
  • 0.25 cup cilantro
  • 1 medium lime
  • 0.25 teaspoon salt (for salsa)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Season the chicken breasts with 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of paprika, and 1 teaspoon of garlic powder.

Step 3

Cook the chicken breasts in the skillet for 5-6 minutes on each side until golden brown and fully cooked (internal temperature of 165°F). Remove from skillet and set aside to rest.
