Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 pieces Garlic cloves, minced
  • 20 pieces Pepperoni slices
  • 4 cups Baby spinach
  • 1 cup Canned crushed tomatoes
  • 0.5 cup Chicken broth
  • 1 teaspoon Dried oregano
  • 0.25 cup Grated Parmesan cheese (optional)

Directions

Step 1

Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium. Add the remaining 1 tablespoon of olive oil to the skillet, followed by the minced garlic. Sauté the garlic for 30 seconds until fragrant, being careful not to burn it.

Add the pepperoni slices to the skillet and cook for 2 minutes, stirring occasionally, until they release some of their oils and become slightly crispy.

Remove the lid and add the baby spinach to the skillet, stirring it into the sauce. Cook for another 2-3 minutes until the spinach is wilted.
