  • 4 pieces Bone-in, skin-on chicken thighs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 cup Pearl onions, peeled
  • 2 cups Cremini mushrooms, sliced
  • 3 cloves Garlic, minced
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon All-purpose flour
  • 1 tablespoon Water
  • 2 tablespoons Chopped fresh parsley (optional for garnish)

Directions

Step 1

Season the chicken thighs with 1 teaspoon of salt and 1/2 teaspoon of black pepper on both sides.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Place the chicken thighs skin-side down into the skillet and cook for 6-7 minutes until the skin is golden brown. Flip the chicken and cook for another 4 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, reduce the heat to medium and add 2 tablespoons of unsalted butter. Once melted, add the peeled pearl onions and sliced cremini mushrooms. Sauté for 5-6 minutes until the onions are tender and the mushrooms are golden.
