Season the chicken thighs evenly with salt and black pepper on both sides.
Heat olive oil in a large skillet or pan over medium-high heat. Once the oil is hot, place the chicken thighs skin-side down and sear for about 5-6 minutes or until the skin is golden brown and crisp. Flip the chicken and cook for another 3-4 minutes. Remove the chicken from the pan and set aside.
In the same pan, lower the heat to medium and add the minced garlic. Sauté for about 30 seconds, or until fragrant.
