Ingredients

  • 500 g boneless, skinless chicken thighs
  • 250 g mushrooms (shiitake or button)
  • 1 piece lemongrass stalk
  • 2 pieces red chili
  • 3 pieces garlic cloves
  • 1 inch ginger
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tsp brown sugar
  • 1 piece lime
  • 2 tbsp vegetable oil
  • 2 pieces spring onions
  • 2 tbsp fresh cilantro

Directions

Step 1

Cut the chicken thighs into bite-sized pieces. Set aside.

Step 2

Slice the mushrooms thinly and set those aside as well.

Step 3

Peel and finely mince the garlic and ginger.

Step 4

Remove the outer tough layers of the lemongrass stalk, then finely chop the tender inner core.

Step 5

Thinly slice the red chilies into rounds. If you prefer less heat, remove the seeds before slicing.

Step 6

Juice the lime and set the juice aside.

In a small bowl, prepare the sauce by mixing soy sauce, fish sauce, oyster sauce, and brown sugar. Stir until the sugar dissolves.
