Ingredients

  • 4 pieces Chicken thighs (boneless, skinless)
  • 1 cup Mango (ripe, peeled, and diced)
  • 1 cup Ketchup
  • 2 tablespoons Brown sugar
  • 2 tablespoons Soy sauce
  • 1 tablespoon Apple cider vinegar
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 1 teaspoon Paprika
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro (chopped for garnish, optional)
  • 4 wedges Lime wedges (for serving, optional)

Directions

Step 1

Preheat a grill or grill pan to medium-high heat.

Step 2

In a blender or food processor, combine the diced mango, ketchup, brown sugar, soy sauce, apple cider vinegar, minced garlic, grated ginger, and paprika. Blend until smooth to make the mango barbecue sauce.

Step 3

Pat the chicken thighs dry with paper towels. Rub them with olive oil, salt, and black pepper.

Step 4

Reserve 1/4 cup of the mango barbecue sauce for serving, and set it aside.

Step 5

Place the chicken thighs on the hot grill. Cook for 6-7 minutes on one side, then flip and brush with the mango barbecue sauce. Cook for another 6-7 minutes, brushing again with the sauce during the last few minutes of cooking. The internal temperature of the chicken should reach 165°F (74°C).

Step 6

Remove the chicken from the grill and let it rest for 5 minutes.

Step 7

Serve the grilled chicken with the reserved mango barbecue sauce drizzled over the top. Garnish with fresh cilantro and lime wedges, if desired.
