Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 0.5 cups All-purpose flour
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 pieces Shallots, finely chopped
  • 2 cloves Garlic, minced
  • 0.5 cups Madeira wine
  • 1 cup Chicken stock
  • 0.5 cups Heavy cream
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Dredge the chicken breasts in flour, shaking off the excess.

Step 3

Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3–4 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.

Step 4

Reduce the heat to medium and add the butter to the skillet. Once melted, add the chopped shallots and cook for 2–3 minutes until softened.

Add the minced garlic to the skillet and cook for 30 seconds, stirring constantly to avoid burning.

Deglaze the skillet by pouring in the Madeira wine, scraping up any browned bits from the bottom of the pan. Allow the wine to simmer for 2–3 minutes until slightly reduced.
