  • 4 pieces Chicken thighs (bone-in, skin-on preferred)
  • 2 whole Garlic heads
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 cup Dry white wine (optional)
  • 1 cup Chicken stock
  • 4 pieces Fresh thyme sprigs
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper (freshly ground)
  • 2 tablespoons Lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken thighs dry with paper towels and season them generously with salt and black pepper on both sides.

Step 3

Separate the garlic heads into individual cloves but leave them unpeeled. Lightly smash each clove with the side of a knife to release its aroma.

Step 4

In a large oven-safe skillet or saute pan, heat the olive oil over medium-high heat.

Place the chicken thighs skin-side down in the skillet and sear for about 5-6 minutes, or until the skin is golden and crispy. Flip the chicken and sear the other side for 2-3 minutes. Remove the chicken from the skillet and set aside.
