Ingredients

  • 2 pieces chicken breasts
  • 200 grams haloumi cheese
  • 3 tablespoons honey
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic cloves
  • 2 teaspoons fresh thyme
  • 1 lemon
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 100 grams baby spinach or arugula
  • 2 tablespoons toasted pine nuts

Directions

Step 1

Season the chicken breasts on both sides with salt and pepper.

Step 2

Heat 1 tablespoon of olive oil in a large non-stick pan over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and fully cooked. Remove the chicken and set aside to rest.

Step 3

While the chicken cooks, slice the haloumi into 1cm thick pieces. Finely mince the garlic and zest half the lemon.

Step 4

Add another tablespoon of olive oil to the same pan and reduce the heat to medium. Add the haloumi slices and cook for 2-3 minutes on each side, until golden and crispy. Remove and set aside.

Step 5

Add the minced garlic to the pan and sauté for 30 seconds until fragrant. Stir in the honey, lemon zest, and thyme leaves, and cook for 1 minute until slightly thickened.

Step 6

Return the chicken and haloumi to the pan, spooning the honey glaze over them to coat. Heat for 1-2 minutes to ensure everything is warm.

Step 7

Plate the baby spinach or arugula on serving plates. Slice the chicken and place it on top of the greens. Arrange the haloumi slices alongside the chicken.

Step 8

Drizzle any remaining honey glaze from the pan over the chicken, haloumi, and greens. Garnish with toasted pine nuts and a squeeze of fresh lemon juice for brightness.
