Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion (thinly sliced)
  • 3 cloves Garlic (minced)
  • 1 cup Fresh or dried figs (halved)
  • 1 Lemon (zested and juiced)
  • 0.5 cup Chicken broth
  • 1.5 tablespoons Honey
  • 1 Cinnamon stick
  • 2 sprigs Fresh thyme (optional, for garnish)

Directions

Step 1

Season the chicken thighs on all sides with salt and pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the chicken thighs skin-side down until golden brown and crispy, about 4-5 minutes. Flip and cook the other side for 2-3 minutes. Remove and set aside.

Step 3

In the same skillet, add the sliced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute. Transfer the onion and garlic mixture to the bottom of a crock pot.

Step 4

Add the halved figs, lemon zest, and lemon juice to the crock pot. Stir in the chicken broth and honey. Place the cinnamon stick on top of the mixture.

Layer the seared chicken thighs on top of the fig and lemon mixture in the crock pot, skin-side up.

Step 6

Cover and cook on low for 4-5 hours, or until the chicken is tender and fully cooked (internal temperature reaches 165°F).

Step 7

Discard the cinnamon stick. Serve the chicken with the figs and sauce spooned over the top, garnished with fresh thyme if desired.
