Ingredients

  • 4 pieces boneless, skinless chicken thighs
  • 1 large fennel bulb
  • 2 medium zucchini
  • 2 cups cherry tomatoes

  • 3 cloves garlic cloves, minced

  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup chicken broth
  • 1 medium lemon, sliced
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Trim the fennel bulb and slice it thinly. Slice the zucchini into half-moons about 1/4 inch thick. Set aside.

Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
