Preheat the oven to 375°F (190°C).
Pat the chicken thighs dry with paper towels and season them on both sides with salt and pepper.
Trim the fennel bulbs by cutting off the stalks and slicing the bulbs into 1/2-inch wedges. Slice the apples into wedges, removing the core.
Heat 1 tablespoon of olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.
Place the chicken thighs skin-side down in the skillet and cook for 5-7 minutes, or until the skin is golden brown and crispy. Flip the chicken and cook the other side for an additional 3 minutes. Remove the chicken and set aside.
