Ingredients

  • 4 pieces bone-in, skin-on chicken thighs
  • 2 bulbs fennel bulbs
  • 2 pieces large apples (such as Honeycrisp or Fuji)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cloves garlic cloves, minced
  • 1 cup chicken broth
  • 0.5 cup dry white wine
  • 4 sprigs fresh thyme sprigs
  • 1 tablespoon butter

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Pat the chicken thighs dry with paper towels and season them on both sides with salt and pepper.

Step 3

Trim the fennel bulbs by cutting off the stalks and slicing the bulbs into 1/2-inch wedges. Slice the apples into wedges, removing the core.

Step 4

Heat 1 tablespoon of olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.

Step 5

Place the chicken thighs skin-side down in the skillet and cook for 5-7 minutes, or until the skin is golden brown and crispy. Flip the chicken and cook the other side for an additional 3 minutes. Remove the chicken and set aside.

Step 6

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the fennel wedges and cook for 5 minutes, stirring occasionally, until slightly caramelized.

Step 7

Add the apple wedges and cook for 3-4 more minutes, until they begin to soften.

Step 8

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 9

Pour in the chicken broth and white wine, scraping up any browned bits from the bottom of the pan.

Step 10

Nestle the chicken thighs back into the skillet, skin-side up, and add the thyme sprigs to the mixture.

Step 11

Transfer the skillet to the preheated oven and bake for 25 minutes, or until the chicken is fully cooked (internal temperature of 165°F).

Step 12

Remove the skillet from the oven and transfer the chicken thighs, fennel, and apples to a serving platter.

Step 13

Return the skillet to the stovetop over low heat. Add the butter to the pan drippings and stir to create a rich sauce.

Step 14

Drizzle the sauce over the chicken, fennel, and apples before serving.
