Ingredients

  • 4 pieces chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 1 cup chicken stock
  • 0.5 cup dry white wine
  • 0.5 cup dried cranberries
  • 2 tablespoons fresh tarragon leaves, chopped
  • 0.25 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Season the chicken breasts on both sides with half of the salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil and the butter in a large skillet over medium heat.

Step 3

Sear the chicken breasts for 3-4 minutes on each side, until golden brown. Remove from the skillet and set aside.

In the same skillet, add the remaining olive oil and sauté the chopped onion until translucent and softened, about 4-5 minutes.

Add the minced garlic and cook for an additional minute until fragrant.

Deglaze the skillet by pouring in the chicken stock and white wine, scraping up any browned bits from the bottom of the pan.
