  • 1 cup dried cranberries
  • 1 cup chicken stock
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

Heat the olive oil and butter in a large skillet over medium-high heat.

Add the chicken breasts to the skillet and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
