  • 6 pieces chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 150 grams chorizo sausage, sliced

  • 3 pieces garlic cloves, minced
  • 1 large red bell pepper, diced
  • 1 teaspoon smoked paprika
  • 400 grams canned crushed tomatoes
  • 250 milliliters chicken stock
  • 400 grams canned butter beans, drained and rinsed
  • 3 pieces fresh thyme sprigs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped (optional, for garnish)

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or heavy-based pan over medium-high heat. Add the chicken thighs, skin-side down, and sear for 4-5 minutes until the skin is golden and crispy. Flip and cook for another 2 minutes. Remove the chicken from the pan and set aside.

Step 3

Reduce the heat to medium. Add the remaining 1 tablespoon of olive oil to the same pan. Add the sliced chorizo and cook for 2-3 minutes, stirring occasionally, until it releases its oils and becomes slightly crispy.

Add the chopped onion, minced garlic, and diced red bell pepper to the pan. Sauté for 5 minutes until the vegetables soften.
