Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 2 pieces Chipotle peppers in adobo sauce, chopped
  • 15 ounces Canned crushed tomatoes
  • 1 teaspoon Dried oregano
  • 1 cup Chicken broth
  • 0.25 cup Heavy cream
  • 12 ounces Ziti pasta
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Parmesan cheese, grated

Directions

Step 1

Season the chicken breasts evenly with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown. Remove chicken from skillet and set aside.

Step 3

Reduce heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Add the chopped onion and sauté for 3-4 minutes, until softened.

Add the minced garlic and chopped chipotle peppers to the skillet, stirring frequently for 1 minute until fragrant.
