  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh cherries, pitted

  • 1 piece shallot, finely chopped

  • 0.5 cup dry white wine
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate, tented with foil to keep warm.
